Potato and Cheddar Cheese Soup

  • 1/4 pound sliced bacon, cut crosswise into thin strips
  • 1 large onion, chopped
  • 3 pounds baking potatoes (about 6 large), peeled & cut into 1 inch cubes
  • 4 1/2 cups water
  • 1 teaspoon salt (sea salt preferred)
  • 1 1/3  of Co-op Gold Cheddar, grated
  • 1/4 cup chopped chives or scallion tops



  • In a large saucepan, cook the bacon over moderate heat until crisp. Drain on paper towel. Pour all but 2 tablespoons of bacon fat, or if not enough add cooking oil to make enough. Reduce heat to moderately low.
  • Add onion & cook until translucent, about 5 minutes.
  • Stir in potatoes, water & salt and bring to a boil. Reduce heat, cover & simmer until potatoes are tender.
  • Remove half the soup from the pan and puree in food processor. Alternatively, mash more of the potqatoes with a potato masher.  Return puree to pan.
  • Over low heat, add Co-op Gold grated Cheddar Cheese and stir until melted.  Remove from heat. Add salt to taste.
  • Serve the soup topped with the bacon & chives.
