Cabbage and Pineapple Salad

Ingredients:

  • 1 Pound of Green Cabbage
  • 1 Cup Celery, cut diagonally
  • 1/2 Green Peppers, cut in thin strips
  • 1/2 Cup Tomatoes, cut in tiny wedges
  • 1 Cup Fresh Pineapple, diced
  • 1 teaspoon Salt
  • 1 Grind of Freshly Grated Pepper
  • 1 teaspoon of Italian Salad Dressing
  • 2 Tablespoons of Co-op Gold Sour Cream
  • 2 to 3 Tablespoons of Milk

Directions:

  • Shred Cabbage into thin slivers.  Lift a handful of cabbage at a time and from a 12 inch height; allow the cabbage to drop lightly into a 2-quart bowl.
  • Add celery, green peppers, tomatoes, pineapple, salt, pepper & salary dressing.
  • Combine the milk & the Co-op Gold Sour Cream, and mix into cabbage.
  • Note: only add enough to hold the salad together.
  • Garnish with parsley or watercress, if desired.
  • Serve in small salad bowls, or one large bowl on the table.  Enjoy.   Serves 8!
  • Yield:  8 small salads or a 2-quart salad bowl.
