4-Cheese Mached Potatoes

  • 2 lbs. of potatoes (about 6 med., peeled & cubed)
  • 1/4 cup of cheddar, 1/4 cup of mozzarella, 1/4 cup of swiss, 1/4 cup of parmigano cheese
  • 1/2 cup milk, or as necessary for desired consistency
  • 3 T. butter
  • 3 T. finely chopped fresh parsley
  • 1/8 t. of salt
  • 1/8 t. of fresh ground pepper


  • Place potatoes and about 1" of water in a saucepan.  Heat to boiling over medium-high heat.  Reduce heat, cover and simmer for 8-12 minutes or until potatoes are tender.
  • Drain well, if desired transfer potatoes to a mixing bowl.
  • With potato masher or mixer at low speed, coarsely mash potatoes.
  • Add cheeses, milk & butter.  Mash & beat until smooth and fluffy.  Stir in parsley; season to taste with salt & pepper.
